Could the shallow sleeve directly behind the camera compartment (within in the main compartment) work for a low-profile hydration bladder?

Yes it could. However there is a dedicated sleeve on the side for a 2-2.5L bladder with a velcro tab to hold it and a cut out to pass the tube through. You have to put something on the other side (like a heavier lens or tripod) to held with weight distribution.

Can I access to the camera compartment without taking the pack off? Take the shoulder straps off, leave waist strap on, rotate to front?

Hi and yes for sure. Of note, you will need to support the underside of the pack with one hand while you unzip and access your gear with the other. And most importantly pack light so it’s easy to manage the weight. Have fun and go get your pack dirty!!
