Is an eight a medium or large?

I’d say a medium. I’m a 10-12 and the large fits great.

Has anyone worn these skiing? Are they warm?

I have not worn them skiing, but they are not lined. They're made from thin material, more appropriate for hiking in a tropical rainforest than cold weather. I suppose you could wear thermal underwear, but they are not designed for cold.

I’m 5’3, 130 lbs. what size should I order?

Hi, I'm 5'5" and 125 lbs. I got the medium as I wanted them comfortable for long plane journeys. They are roomy but not too clumsy. The length is adjustable. This is probably the best size for you.

Does material cause any skin irritation on legs after long hikes?

No I didn’t have any problems with my skin after long hikes
