Is this jackfruit in brine or water?

It's brine. You'll see in the ingredients list of the photos. Brine is no more than salt water & the contents here is 27% sodium.

A recipe I have calls for the jackfruit to be seeded. Is this seeded already, or would I have to seed it?

Yes, this is seeded. No seeds it's just the jackfruit meat

Is it stinky in this form?

I am not sure what you mean by stinky. It smells like can food, like artichoke or hearts of palm. Or are you comparing it to the actual fruit? The fruit (not from the can) smells sweet.

It’s canned veggie you need to heat it up. I wasn’t impressed.
